I am glad to see you've found others to help support your D and teach her these skills and to acclimate into a world where she will feel comfort.
I had to laugh reading all the duties of your coaches, because I realized that it's pretty much what I did for the past few years with my D. No wonder I'm so tired. We had so many hours of cooking classes, reviewing recipes, and testing the final products. And going to some very interesting markets for special ingredients. Now my D loves to cook and make me meals.
I'm sure you assessed the nutritional coach so that she is on the same page with the nutritional needs of your D that you and the RD have prescribed - for well balanced meals with plenty of proteins, fats, and complex carbs - so necessary for maintenance stage.
